POTATO SALAD

  • 8-10 med. potatoes
  • 1 sm. to med. onion, chopped
  • 1 T. mustard
  • 9 eggs, hard-boiled
  • 1/2 tsp. garlic salt
  • 1 T. vinegar or pickle juice
  • 1 c. mayonnaise
  • 1 c. Miracle Whip
  • 3 dill pickles, chopped
Directions
  1. Scrub and wash potatoes. Boil potatoes with the skins on, poke with a fork to see if they are done. Boil eggs. While potatoes and eggs are cooking, make the dressing mixture by mixing mustard, vinegar, mayonnaise, Miracle Whip, garlic salt, chopped onion and pickles. After eggs are done, drain off boiling water and fill pan with cold water so eggs can cool faster. After potatoes are done, peel and dice them while they are hot, stir in dressing mixture. Peel and dice eggs and stir into salad. Add salt and pepper to taste. Refrigerate until cold.
