Easy Pumpkin Bread

  • 3 cup flour
  • 2 cups sugar
  • 1 tsp. soda
  • 1 tsp. salt
  • 3 tsp. cinnamon
  • 1/2-1 cup chopped walnuts
  • 2 c. pumpkin
  • 4 eggs
  • 1 1/4 c. vegetable oil
  • (Could also add raisins or chocolate chips to batter if desired)
Directions
  1. Place dry ingredients in a large bowl (that takes a lid, like Tupperware). Put lid on bowl and shake to combine ingredients. Remove lid and make a deep well in the center of the dry ingredients, making sure the bottom of bowl remains covered with dry ingredients.
  2. Mix together the pumpkin, eggs and oil until blended.
  3. Pour pumpkin mixture in the center of the well, stirring carefully and just enough until all the dry ingredients are moistened.
  4. Pour into 2 greased and floured pans. Bake at 350\' for 1 hour or until done. Cool and frost if desired.
Additional Tips
Frosting: 1 8-oz package cream cheese (room temp), 1 cup brown sugar, 3 tsp. cinnamon. Stir together to mix well. Let set for apx. 1 hour to allow brown sugar to melt with cream cheese. Frost pumpkin bread and top with nuts if desired. Frosting stays soft, and could be used as a spread on pumpkin bread rather than frosting loaf.
