Easy Pumpkin Bread

- 3 cup flour
- 2 cups sugar
- 1 tsp. soda
- 1 tsp. salt
- 3 tsp. cinnamon
- 1/2-1 cup chopped walnuts
- 2 c. pumpkin
- 4 eggs
- 1 1/4 c. vegetable oil
- (Could also add raisins or chocolate chips to batter if desired)
Directions
- Place dry ingredients in a large bowl (that takes a lid, like Tupperware). Put lid on bowl and shake to combine ingredients. Remove lid and make a deep well in the center of the dry ingredients, making sure the bottom of bowl remains covered with dry ingredients.
- Mix together the pumpkin, eggs and oil until blended.
- Pour pumpkin mixture in the center of the well, stirring carefully and just enough until all the dry ingredients are moistened.
- Pour into 2 greased and floured pans. Bake at 350\' for 1 hour or until done. Cool and frost if desired.
Additional Tips
Frosting: 1 8-oz package cream cheese (room temp), 1 cup brown sugar, 3 tsp. cinnamon. Stir together to mix well. Let set for apx. 1 hour to allow brown sugar to melt with cream cheese. Frost pumpkin bread and top with nuts if desired. Frosting stays soft, and could be used as a spread on pumpkin bread rather than frosting loaf.
